Goodbye Max

It's never easy to let a beloved family pet go. We've had the misfortune of having to let both of our schnauzers go within the last year. Back in March of last year Jasper became extremly ill very quickly(within 2 days) and we had to say goodbye rather unexpectly. And within the past 3 months our other dog Max has slowly been going down hill. Today we made our last visit to the vet and had him put to sleep. It's one of the hardest thing I think I've ever had to do, but we knew this day would be coming. They become your kids and you want to do what's best, but sometimes you just can't kiss the boo-boo and make it all go away.

Max was a very sweet dog, we will miss him dearly. But he's in a better place chasing bunnies I'm sure.

Foodie Fridays

Since the other blogs I've seen do something fun on Friday, I thought I'd start Foodie Fridays and share a good recipe for the week. This week and the next few weeks, due to Lent, the recipes will be meat free! So this week I'll start with Broccoli Lasagna!

1 pkg. Lasagna noodles
1 head fresh broccoli, cleaned and chopped(or a big pkg frozen chopped)
1/4 cup parmesan cheese
2 cups shredded mozzarella cheese, divided(I'd use just a little more cuz I like cheese!)
1-15oz. ricotta cheese
1 egg
1 jar of alfredo sauce

Preheat oven to 350.
Cook pasta according the pkg, or until desired tenderness.
In a bowl combine ricotta, egg, and 1 cup mozzarella.
In a 13x9 pan place a layer of cooked pasta on bottom and top with cheeze mixture, broccoli, and 1/4 of the jar of sauce.
Sprinkle with extra cheese if desired and repeat layers until dish is full.
Cover with remaining parmesan and bake covered for 20 minutes. Uncover and bake another 20 minutes or until bubbly.
Let stand 3-5 minutes before serving and Enjoy!

First post

Well this is the first post of many! Today I joined the bandwagon and started my own blog. I'll probably make a million mistakes and I'll tweek it a million times before I get it right, but it's a start. Even though my life isn't that exciting, I thought this would give our family a way to keep tabs on us and what is going on in our life.
