Basement update




We lucked into some good Craigslist deals and the island countertop finally came in so we are on our way to a finished kitchen!! We're still hunting for a refridgerator, but found one at Lowes that will do if we can't find a deal. Darrell worked on getting the microwave and dishwasher installed today.


We are still cleaning up the storage areas and again I am amazed at the stuff we accumulate. Things like 5 "extra" lamps and 4 "extra" shades? I found a box of purses that have broken straps, why I have them, I don't know. But they are finding a good home via donation.

Foodie Friday

Today's recipe is an easy one but lately it has hit the spot!

Asiago Chicken Sandwich

2 Slices Asiago cheese bread(from Bread Co. or Walmart has an excellent loaf)
6 Slices thinly sliced chicken or turkey from the deli
1 Slice of Provolone cheese
2 tsp. chipolte mayo

Heat a grill pan or skillet on med. heat.
Lightly butter one side of each slice of bread. Place 1 slice, butter side down, in pan. Stack 4 slices of meat then slice of cheese, then the extra 2 pieces. Spread chipolte mayo on opposite of 2nd slice and top sandwich, butter side up.
Grill each side till golden brown.
Serve with chips or veggies!!

Too early for spring cleaning

Since it is too freakin cold to go anywhere, Darrell and I took advantage of being stuck in the house and cleaned out our storage room in the basement. We organized, cleaned, and now have 5 boxes and a trash bag of goodies for charity. I still am amazed at all the stuff we have or should I say the stuff we didn't throw away!
Disable Vet's are coming this week to pick up our goodies including Christmas decorations! I consolidates 3 shelves of Christmas decor down to 2 and and empty tote!!! I searched all over St. Charles county looking for a place to donate old and unused holiday decor to and no one was accepting donations. What's up with that?? Anyway...we cleaned up our clutter and found some real treasures. I think we had enough hand-me-down dishes and utensils to serve at least 50 people. I found a box of wedding supplies...why did I feel the need to bring that with us when we moved from our old house?? It's been almost 10 years since we got married and no one I know is going to use already burned purple candles and ribbon for their wedding. We found we own 9 lunch box coolers. One for everyday of the week +! And a host of knick-knacks we didn't know we had. So they are finding a useful home with someone else. Now we need to tackle to man cave...anyone need floral supplies???

Foodie Friday

It's been forever since I've posted a Foodie Friday, and really we don't have a whole lot going on now that the Holidays are over. So quick catch up then a yummy recipie.
Christmas decorations are finally down. We finally sold our old dining room set and I've redone the hand-me-down we had. Looks pretty good!
Darrell has made more progress on the basement. He installed all the cabinets and the countertops. We still need the island, but have to have the island countertop cut first. We are hoping to move bedroom furniture downstairs this month and get Jack set up in his new room so we can get started on the nursery if needed. Blue or Purple on 1-22-10!!!!

Now on to the yummies!! Darrell has a buddy who got us some HUGE fresh portabella mushrooms. So I made Beverly's stuffed portabella mushrooms:
4-portabella mushrooms, wash, pat dry, and remove stems and gills(stems can be saved for soups)
1- cooked BLSL chicken breast, cut into small pieces
1/2 can artichoke hearts,not marinated, chopped
1/3 cup Italian bread crumbs
1 cup mayo
1/2 cup sour cream
1 cup shredded Italian cheese
In a large bowl, mix chicken, artichokes, bread crumbs, mayo, and sour cream.
Brush mushrooms, both sides, with olive oil and place stem side down on baking sheet. Bake at 400 for 10 minutes.
Turn mushrooms over and spoon mixture into the caps. Top with shredded cheese and bake until cheese is melted.
Serve with wild rice.
Can be made vegetarian as well.

16 Weeks

I had my 16 week Dr. appt. today and all is well. She barely touched my stomach and the baby was right there, whoosh, whoosh, whoosh!!! Strong and healthy heart beat and growing. We scheduled the big ultrasound for Jan. 22, 2010! Can't wait to see if I get to buy cutie purple outfits!!

Christmas 2009







































Santa visited our house on Christmas Eve, while we were at church, and he left Jack with some great presents.

We were dreaming of a white Christmas and guess what we got...

We spent Christmas day at Grandma and Grandpa Thompson's house where Santa left even more presents for Jack!! And even some for Darrell and I!

Santa even made it to Grandma and Grandpa Abt's in Ste. Genevieve with some presents.

Basement Progress











We are making progress on the kitchen. We purchased cabinets a couple weeks ago and Darrell has been installing them. We lucked out and found a counter top pre-made, that we both liked, so we bought it and that is our next step. We were hoping to get the countertops in by New Years but probably won't happen. The island and appliances are still in the works, but were almost there!
